Crescioni or
cassoni represent the main variant of the Piadina.
The mixture then is the same: after lying in a circular shape and filled with the compendium is closed on itself and coke on the traditional “testo” or in a pan avoiding to pierce it.
The filling ingredients were traditionally the simple and poor ones of the countryside also used in many other peasant dishes: wild herbs such as chicory, chard, rosole or poppies, stridoli, dandelion etc ..., pumpkin and potatoes, cabbage and caps, maybe flavored occasion with some greaves, a bit of lard or olive oil or a little cheese mostly home-made, depending on availability.
