TORTELLI ALLA LASTRA
The
Tortelli alla Lastra are a typical dish of the Valley of Savio.
They are similar to ravioli made by a very easy dough with flour, water or milk and yeast, with a rectangular shape, filled with boiled potatoes with the addition of yellow pumpkin, maybe previously flavored in oil or lard, whit schallot, garlic and bacon but also parmesan cheese and eggs, depending on the availability .
At one time the cooking was done on the traditional “testo” placed over the embers of the fireplace or stove at the level of a stove.
